The Pungoteague Ruritan Club’s annual small boat “Poker Run” is Saturday, July 30, 2016. A fun day on the water collecting cards for the best poker hand. The course is on the Chesapeake Bay from Onancock to Occohannock Creeks including Onancock, Pungoteague, Nandua and Occohannock Creeks. Wild Turkey Breast Stir-Fry
Serving Size: 4
- 2 wild turkey breasts, boneless and skinless; cut into thin strips
- 2 tablespoons olive oil
- 2 tablespoons vegetable oil
- 3 tablespoons Worcestershire sauce
- 1/4 cup orange juice
- 1/4 cup sake or dry sherry
- 1 tablespoon cornstarch mixed with equal part cold water
- 2 T. lemon juice
- 3 garlic cloves, minced
- 2 tsp. ginger
- 1 tablespoon brown sugar
- 2 more T. olive oil
- 1/2 cup dry-roasted peanuts (optional)
- ½ chopped sweet onions
- 3 or 4 handfuls of spinach
- 1/2 cup Craisins
- 1 8-ounce can sliced water chestnuts
- 4 cups noodles or rice
Combine 2 T. olive oil, 2 T. vegetable oil, Worcestershire sauce, orange juice, sake (or sherry), lemon juice, garlic, ginger and brown sugar in a non-reactive bowl (glass, wood, plastic). Add turkey, toss to coat and refrigerate for 2 to 3 hours. Heat 2+ T. olive oil in a wok or large skillet over medium-high heat. Slightly sauté the onions. Remove turkey from marinade. Reserve marinade. Add turkey to oil and onions and stir-fry for 2 to 3 minutes. Remove turkey from pan. Add reserved marinade and cornstarch/water mixture and heat liquid to boiling for 5 minutes. Return turkey to the pan. Add the rest of the ingredients and heat to warm. Serve immediately over noodles or rice.
